I have a very special drink to share with you for today’s happy hour. Today A and I are heading off to Vegas for a weekend of our 2 favorite things: eating and UFC. When I asked A for help figuring out a drink for this week, he pulled a dusty copy of “the bartender’s bible” off the bookshelf. Five minutes later he was pitching the idea of a “muay thai mai tai” to me. How creative is that??
I know a lot of places make very girly mai tais with lots of fruit juice. Fortunately I found a recipe for an authentic hawaiian mai tai that only mixes different liquors with a lime and a few drops of simple syrup. This drink is so strong, it’s definitely deserving of its new name.

What you need to make this drink: 2 ounces dark rum, 2 ounces white rum (10 Cane is my favorite these days), 1 ounce Cointreau, 1 ounce Amaretto, 1 lime, 1 tablespoon simple syrup, plus a tiny splash of pomegranate or cranberry juice (the sugar syrup and juice are a substitute for 1 ounce of grenadine - I don’t keep this in my stock).
Fill a shaker with crushed ice. Pour in 2 shots of each kind of rum. Add the juice of one lime and one ounce of cointreau.
Add one ounce of Amaretto liquor (DiSaranno).
Add one tablespoon of simple syrup (I was just making a fresh batch - equal parts sugar and water brought to a boil and then gently simmered for 3 minutes - it keeps in the fridge for weeks). Also pour in an ounce of pomegranate or cranberry juice.
Shake, then strain into a highball glass filled with crushed ice. Perfect for fight night!
